The key physical criterion for strawberry transportability is flesh firmness, which is measured using penetrometers. Biochemical indicators that determine high shelf life include a dry matter content of 11–12%, a protopectin concentration of over 0.6%, and a fiber content of more than 1.2%.
This indicator is considered a priority when selecting commercial varieties, as it determines the geography of supply. When storage conditions are maintained, such as a temperature of 0.5°C and a relative humidity of 90%, fruits of varieties with high transportability maintain their quality for up to 9–11 days.
