An important physical and mechanical indicator is fruit firmness, measured in newtons per square centimeter, which is critical for maintaining fruit structure during thermal processing.

Processing efficiency depends on the ease of calyx and pedicel removal, with varietal differences in their attachment determining the proportion of solid waste.
