Zucchini is characterized by a high water content, reaching 95%, which during conventional freezing leads to the formation of large ice crystals that destroy cellular structures. As a result, after thawing, the flesh loses its firmness and becomes watery. High enzymatic activity in tissues without pre-treatment causes fruit browning, the development of bitterness, and a decline in flavor quality during storage.
The technological suitability of fruits for freezing depends on varietal characteristics: preference is given to varieties with firm flesh and a small seed cavity volume. Overgrown fruits with a coarse texture are considered unsuitable. To minimize negative changes, a critical stage is blanching for 2–3 minutes to inactivate enzymes or pre-pressing moisture from the grated mass.
