A critically important factor is harvesting at the stage of technical maturity, before the formation of a coarse parchment layer, which negatively affects the texture of the finished product after defrosting.
The raw material processing technology requires mandatory preliminary blanching, which helps to preserve the natural color and taste characteristics of the pods. The freezing process must be rapid to prevent the formation of large ice crystals, with subsequent storage of the product at a temperature not exceeding -18 °C.
