The name "cayenne pepper" refers to a group of varieties, not a single breeding sample. Most sources classify it as Capsicum annuum L., although there are mentions of a connection with the species Capsicum frutescens or Capsicum chinense. The native region of these plants is considered to be Mexico and Guatemala.
Plants typically reach a height of 60–90 cm, growing up to 120–150 cm in protected cultivation. Maturity timing varies from 48–55 days after transplanting to 90 days after sowing. The fruits are of an elongated conical shape, with a length of 10–15 cm and a weight of 25–80 g, reaching a bright red color at biological maturity.
The varieties possess good stress tolerance and heat resistance, often requiring staking due to abundant fruiting. The pungency of the fruits varies in the range of 30,000 – 50,000 Scoville Heat Units. Produce is used in fresh and dried form, as well as for the production of powder and for medical purposes.
