The Rossa variety is a traditional local type of carob tree preserved in the IRFAP germplasm bank. The plant is adapted to Mediterranean conditions, including drought tolerance and growth on poor calcareous soils.
The fruits of the Rossa variety are distinguished by a significant endosperm yield and high levels of galactomannans, fructose, and soluble solids. The technological properties of the fruits allow them to be used for the production of locust bean gum.
