Magdeburg chicory, also known as Magdeburger Spitzkopf, is a biennial plant with a vigorous leaf rosette in the first year of life and a developed taproot. Historically, this type was used on an industrial scale for processing roots into chicory powder, used as a coffee substitute.
Morphologically, the variety is characterized by a spindle-shaped root. Due to its high inulin content, this genetic material became the basis for breeding most modern industrial varieties and groups of chicory, including witloof.
