The Okeus variety is classified as an industrial or root chicory. Its primary purpose is the production of raw materials for the manufacturing of soluble beverages, which requires a high dry matter content in the root crops.
During variety testing, key assessment criteria for the variety included yield indicators of soluble dry substances compared to control samples, as well as the asparagine content level. An important quality indicator is resistance to bolting, which was tested under conditions conducive to early bolting.
