The variety belongs to the cardoon species, also known as the artichoke thistle. The period from transplanting to harvest is 110–160 days. The vigorous plant forms a large rosette of silvery-green, deeply divided leaves with wide white or light green stalks.
An important characteristic is the absence or minimal presence of spines. To improve flavor and reduce bitterness, the stalks require a blanching procedure by hilling or wrapping with opaque material a few weeks before harvest.
The plant is not frost-hardy and requires protection upon the arrival of cold weather. In landscape design, it is used as an ornamental crop due to its striking appearance and large lilac-blue inflorescences that appear in the second year of vegetation.
