The variety is autochthonous to the Spanish region of Navarre. Unlike the artichoke, the value of the plant lies in the consumption of leaf petioles, which are used fresh and in the food industry, including the production of frozen products.
Blanco de Peralta belongs to the "white" group of cardoon varieties. Research confirms high product quality, where the proportion of high-quality petioles in the total yield exceeds 30%. The variety is one of the most common local types in its region.
