The plant has medium height and spineless leaves with a high degree of heterophylly. The inflorescences are characterized by a cylindrical shape; the outer bracts are green with a purple hue, while the inner ones are light green, soft, and tender.

This ecotype is distinguished by the absence of coarse fibrous parts and a sweetish taste. The produce is valued both for fresh consumption and for processing. The ecotype has the status of Protected Geographical Indication (PGI).
