The variety was developed through long-term selection in the area of the city of Tudela and is a key crop for the Navarre region. The plant is a herbaceous perennial, which is propagated primarily vegetatively by cuttings to preserve varietal traits.

The inflorescences have a rounded or ellipsoid shape and a muted green shade. A distinctive feature is the incomplete closure of the bracts at the apex, which creates a characteristic round opening. The harvest is used both for sale on the fresh market and for the canning industry.

The produce is valued for its sweetish taste, tenderness, and resistance to browning after harvest. Under industrial conditions, the cultivation cycle for fresh market production is annual; when used for canning, it can be biennial.
