The plant reaches a height of 1.2 to 2 meters and is characterized by robust development. The leaves are large, deeply incised, bright green on the upper side, and matte silver-white on the underside. The presence of spines on the stalks is reflected in the variety name.
Market maturity is reached 5–7 months after sowing; harvesting takes place in September–October. To reduce bitterness, the fleshy stalks require a blanching procedure through earthing up or shielding from light before harvest.
The variety is demanding regarding soil fertility and moisture, requiring space when planted. In addition to culinary use, the plant is valued as an ornamental crop, producing large purple inflorescences in the second year.
