The plant reaches a height of about 80 cm. The harvest takes place in the autumn period. The petioles of the variety possess a taste with nutty notes and hints of celery.

The variety name translates as "hunchback," which is due to the cultivation technology: in autumn, the plants are laid on their side and partially covered with soil. In the process of seeking light, the stalks bend, taking on the shape of a hump, and are also blanched, losing bitterness and becoming more tender.

The variety is used primarily in cooking, being a key ingredient in the traditional Piedmontese dish bagna cauda, and is also used in other local recipes.
