The plant is of a bushy type with a powerful stem, taproot, and large leaves. The name Gobbo, meaning "hunchback," is due to the traditional cultivation method in which plants are tied into a bundle in October and partially covered with soil for 40 days. In an attempt to reach for the light, the plant bends, and the petioles become crisp and ivory-colored during the blanching process.
Seeds are sown in May, after which the plants require a long vegetation period. Further cultivation usually does not require additional irrigation. Productivity ranges from 0.5 to 1.5 kg per plant. The crop is ready for sale in the period from December until Easter.
