Most often, the name refers to the variety Transparente de Croncels, which is characterized as a summer variety with a vigorous spreading tree. Its fruits are medium to large in size, have thin transparent whitish-yellow skin and a sweet-vinous aroma, while they store poorly and quickly become mealy.

This name is also applied to the winter variety Roter Eiserapfel, known since the 16th century, which is distinguished by high regular yields and fruits capable of being stored until June. In addition, the term can be used as a synonym for the variety Grüner Stettiner or to describe the physiological state of overripe apples that become translucent.

In a number of cases, the name Eisapfel is used not to denote the varietal affiliation of the plant, but to denote dessert drinks — ice cider produced using a special technology from late-harvest apples.
