The Elstar variety was obtained in the 1950s as a result of a cross between Golden Delicious and Ingrid Marie. The tree is medium-sized with a rounded, spreading crown, the height of which depends on the rootstock used.

The fruits are medium-sized, round or elongated-round-conical in shape. The skin is yellow with a bright, often striped red blush. The fruit flesh is juicy and aromatic, possessing a sweet-and-sour taste.

The variety belongs to the autumn-winter group; fruits ripen from mid to late September. The trees are characterized by medium winter hardiness and low resistance to diseases, in particular to powdery mildew. It is used primarily as a dessert crop.
