The Pay Bou variety, also known as Calville rouge d’été, is a medium-vigor tree with an upright crown. Harvesting takes place from late July to late August; the fruits have a short shelf life and require prompt consumption.

The tree is undemanding, features high winter hardiness, and has the ability to withstand spring frosts due to late flowering, which allows it to be grown at altitudes up to 1200 meters. The variety shows good resistance to major diseases and pests, including scab and aphids.

Fruits are medium to large in size, cylindrical in shape, with pronounced ribbing. The thin skin varies from pale yellow to purple, and the white tender flesh has a sweet taste and a pronounced aroma. Produce is used primarily fresh or for culinary processing.
