Under the name "Schafsnase," a group of old regional apple varieties of folk selection, which emerged in the 18th–19th centuries, is combined. The common morphological feature of the group is the elongated, conical or skittle-shaped fruit, narrowing toward the calyx.
The taste characteristics of the fruits vary from wine-sweet to sweet-sour, often with spicy or honey notes. The flesh is firm and juicy, and in a number of varieties, it is prone to rapid cooking into puree, which makes them suitable for making juices and cooking. The trees are characterized by vigorous growth and abundant fruiting.
Fruit harvesting is carried out in September–October; most representatives of the group belong to winter varieties and are suitable for long-term storage. The concept of "Schafsnase" includes various biological forms, such as Rheinische, Bergische or Steirische Schafsnase.
