The apple variety «Sofie Æble» (also known as Sophie æble) is a Danish dessert variety that appeared around 1896. Scientific research confirms that the variety is triploid (3N).

When profiling juices from apples of this variety, a high polyphenol content was recorded. The sensory characteristics of the juices are described by the presence of a bitter aftertaste.
