The variety is for table use. In academic research, Montrose has been used to compare textural characteristics when boiled with the varieties Maris Piper, Desiree, and Pentland Dell.
Biochemical studies of tuber composition revealed differences in the variety regarding the content of amino acids that influence taste, particularly glutamate. The soluble pectin levels in the tubers correspond to the characteristics of other varieties in the Tuberosum group.
The variety is listed in the national registry — its seeds are authorized for sale in this country.
