Negra Yema de Huevo is an ancient local variety adapted to the climatic conditions of the Canary Islands. It is a highly productive early-maturing variety intended for cultivation in both the northern and southern zones of Tenerife island.
The tubers of the variety have a round-oblong shape and are characterized by the presence of purple spots in the area of the eyes. The flesh is of a pronounced yellow color. The variety possesses distinct taste qualities, although detailed morphological characteristics of the plant and data on disease resistance are absent in open sources.
