The Negra Yema de Huevo variety is classified as a triploid Solanum chaucha species. It is an autochthonous variety introduced from the Andes in the 16th–17th centuries, which is not a result of breeding work and is included in the list of protected varieties Papas Antiguas de Canarias.
The plant has a drooping habit, an asymmetrical base of the terminal leaflet, and rarely flowers with mauve corollas. The tubers are usually small in size, characterized by dark skin and bright yellow flesh. The variety belongs to the early-maturing category.
The crop is traditionally planted in January and August. A gastronomic variety, best known as the basis for preparing the dish papas arrugadas, where the tubers are boiled in their skins in seawater.
