The name Azul is used to designate one of three groups of local forms of Asturian spelt, classified by ear color. This group does not have the status of a registered variety and does not possess standardized agronomic characteristics.

In general, Asturian spelt is characterized by tall stature, reaching 2 meters, and good adaptation to high humidity conditions. The crop is traditionally valued for high baking qualities.
