The Bauländer Spelz variety is a winter form of spelt with a tall stem, reaching 140 cm. Due to the significant height of the plant, the variety is prone to lodging, especially when cultivated on fertile soils or after leguminous crops.
The plant demonstrates low susceptibility to a number of diseases. The grain of the variety possesses good technological and baking properties, as well as a specific profile of glutenin subunits. The grain composition includes protein, starch, β-glucans, and alkylresorcinols, which makes it suitable for flour production.
