Ostro is one of the most well-known traditional spelt varieties in Switzerland and is used as a genetic benchmark for defining the typical characteristics of the species. Agronomically, the variety is low-yielding and demonstrates a tendency to lodge, as well as susceptibility to certain diseases, which is typical for old varieties.

The grain is characterized by high protein content. Baking properties are assessed ambiguously: scientific publications note low indicators of dough stability and Zeleny sedimentation values, yet the variety is valued in artisanal baking for the "strong" character of its gluten. The produce is used for the production of flour and groats in the organic and traditional farming sectors.
