Maiorca bianca aristata is an awned form of a historical soft wheat variety known in Sicily since the 17th century. The plant is characterized by a very tall stem, reaching 180 cm, which makes it prone to lodging under intensive agronomic practices. The variety is distinguished by high adaptability to arid conditions and high temperatures.
The yield of the variety is low, amounting to about 25 c/ha. The grain is small, white in color, with a protein content of about 8.5% in the flour. Flour from this variety is valued for its whiteness, fine milling, and specific baking qualities suitable for traditional pastry, and it is also considered as a raw material for brewing malt.
