The variety is historical genetic material that has been used in the breeding of other wheat varieties. Currently, Giustalisa is being studied within the framework of scientific programs for biodiversity conservation and adaptive farming in the Mediterranean climate.

The plant is traditionally used for preparing whole-grain pasta. Research also indicates the suitability of the grain of this variety for use in the malting and brewing industry, and also evaluates its quality indicators, including protein content.
