The variety is an ancient landrace historically cultivated on the island of Sicily. The crop is traditionally grown in hilly areas and is distinguished by its ability to efficiently use natural resources and its resistance to weeds, which allows for the use of organic farming methods.
The name Perciasacchi translates as "sack-piercing" due to the pointed shape of the grain. The grain is characterized by a high protein content and low-strength gluten, which results in high digestibility of the product. Flour and semolina from this variety are valued for making artisanal bread, pizza, and pasta.
