The variety Stendhal is a diploid plant (2n=14) and in the Italian agricultural classification is categorized as “small spelt”. It is characterized by the morphological traits of the species Triticum monococcum, including the presence of spikes with tightly adhering glumes, which requires special threshing procedures.

The plant is used primarily in organic farming for the production of food products from so-called ancient grains. The variety is also a subject of scientific research in the fields of genetics and technological properties of grain, including the study of protein composition and their immunogenicity.
