The variety is the result of a natural cross between Savagnin and an unknown variety. The plant has high vigor and good fertility, however, the yield of the variety is considered low. The variety is prone to flower abortion and early bud break, making it sensitive to spring frosts.
The variety has high susceptibility to downy mildew, powdery mildew, as well as grey rot and sour rot. Wines made from Ondenc are characterized by full body and aromas of citrus, quince, apple, melon, as well as floral and honey notes. Among the synonyms for the variety are the names Irvine's White, Sercial, Blanquette, and Dourec.
