The variety originates from the Thessaly region, although there are versions regarding its origin from the island of Evia. The name derives from the Greek word "stavros" (cross), which is associated with the characteristic shape of the vine branches. The variety has medium vigor, and its berries have a dark blue or almost black color and thick skin.

Stavroto N is a late-ripening grape variety, with harvest usually occurring at the end of September. During cultivation, vulnerability to precipitation and a tendency to rot in rainy weather are noted, although there are also reports of its good adaptability to various climatic conditions.

In winemaking, the variety is used as a component of blends, where it softens the tannins and acidity of the Xinomavro variety, giving the wine a deep ruby hue. As a single-varietal wine, Stavroto N is considered less expressive compared to the Krassato variety due to lower sugar and acidity content.
