The variety has a characteristic feature in the form of a conical tip ("beak" or "rostrum") on the apex of the kernel, which is directed towards the top of the ear. It is precisely this morphological trait that gave the variety the name Spin, which in the local dialect means "thorn" or "prickle". The ears have a bright orange color and are described as long and heavy, with a number of kernels ranging from 30 to 40.
Cultivation of the variety is oriented exclusively toward the production of flour for making polenta. The grain contains about 76% starch, as well as amino acids, B and E group vitamins, and mineral salts. Harvesting traditionally falls at the beginning of October, after which the ears are dried naturally or with streams of warm air before the milling process.
