Gas chromatography-mass spectrometry using dynamic headspace and organoleptic tests are used to evaluate the trait. Since the emission of volatile substances is negatively regulated by ethylene, the scent rapidly declines after cutting, necessitating the use of special post-harvest treatments, such as the application of a 5% sucrose solution.
