The intensity of the carnation scent is determined by the composition of volatile compounds, including benzenoids, terpenoids, and fatty acid derivatives. The sweet "medicinal" fragrance is due to the presence of methyl salicylate, while citrus notes are associated with the presence of beta-ocimene and beta-caryophyllene.
Gas chromatography-mass spectrometry using dynamic headspace and organoleptic tests are used to evaluate the trait. Since the emission of volatile substances is negatively regulated by ethylene, the scent rapidly declines after cutting, necessitating the use of special post-harvest treatments, such as the application of a 5% sucrose solution.
