The accepted classification includes early-maturing varieties with a period of up to 90 days, mid-maturing with a period of 90 to 120 days, and late-maturing, which require 120 days or more to reach maturity.

This trait directly affects the shelf life of the produce and the cultivation technology; early-maturing varieties are generally inferior to late-maturing ones in their ability for long-term storage. It is important to strictly observe harvest dates, as a delay of more than 8–10 days after foliage fall triggers secondary bulb growth, which leads to a decline in quality and increased susceptibility to diseases.
