The maturity group of onions is determined by the number of days from mass emergence to the fall of the foliage and the attainment of technical maturity of the bulbs. The accepted classification includes early-maturing varieties with a period of up to 90 days, mid-maturing with a period of 90 to 120 days, and late-maturing, which require 120 days or more to reach maturity.

This trait directly affects the shelf life of the produce and the cultivation technology; early-maturing varieties are generally inferior to late-maturing ones in their ability for long-term storage. It is important to strictly observe harvest dates, as a delay of more than 8–10 days after foliage fall triggers secondary bulb growth, which leads to a decline in quality and increased susceptibility to diseases.
