Cynara cardunculus L.

The artichoke maturity group is determined by the duration of the period from emergence or transplanting to the onset of technical maturity of the main flower bud.

The technical maturity of the inflorescences is determined visually: the heads must remain firm and closed, with tightly adpressed scales. The beginning of scale opening or flowering indicates over-ripening, which leads to a loss of market quality.

Varieties are classified by the duration of the growing season: early varieties have a period of up to 120 days, mid-season varieties — 120–130 days, and late-maturing varieties — from 165 to 210 days or more. The choice of maturity group is critical for adaptation to climatic conditions and the selection of cultivation technology, especially when using the transplant method in regions with short summers.
