Artichoke preservation requires specific preparation due to the high susceptibility of the tissues to oxidation and the complex morphology of the flower buds. The technology is based on the mandatory use of an acidified medium at all stages to prevent product browning.

The artichoke processing procedure is complicated by the necessity of intensive manual or mechanical cleaning, in which only 20–28% of the initial raw material mass ends up in the finished product. To maintain the commercial appearance, all cut surfaces are immediately treated with citric acid, as a high concentration of phenolic compounds triggers rapid enzymatic browning of the tissues.

Thermal processing includes blanching or boiling in acidified liquids, which allows for the preparation of the dense bud structure for subsequent sterilization. In industrial canning, a mixture of vinegar and vegetable oil is often used as a covering liquid, where the oil layer creates a barrier against oxygen, contributing to the maintenance of color and texture stability.
