The eggplant maturity group is determined by the number of days from emergence to technical maturity, at which point the fruits reach the size, shape, and color characteristic of the variety, and possess firm, resilient flesh with underdeveloped seeds. This indicator can also range from 25 to 40 days after the onset of flowering.

It is customary to distinguish three main groups: early-maturing (from 87–100 to 115 days), mid-maturing (from 110–115 to 130–140 days), and late-maturing (130–150 days or more). Selecting a variety based on its maturity period is critical for planning the seedling stage and determining the cultivation method, as late varieties require an extended warm period and are more frequently grown in protected ground.
