The suitability of eggplant for processing is determined by the use of fruits at the stage of technical maturity, characterized by a firm consistency, underdeveloped seeds, and the absence of green spots on the skin, which indicate the presence of solanine.

Technical maturity for industrial processing of eggplant involves harvesting fruits that possess the characteristic varietal shape and color, as well as creamy flesh without hollows. A critically important requirement is the absence of fibrousness and excessive seed development, which indicate overripeness of the raw material and reduce its quality.
The chemical composition of the raw material depends on the size and age of the fruits, with larger specimens (15.1–18.0 cm) often containing fewer nitrates compared to smaller ones. The quality of the final product also directly depends on compliance with preparation regulations, including mandatory blanching to preserve texture and specific procedures for eliminating natural bitterness.
