In open-field conditions, chicory is grown for 140–170 days to develop a robust cylindrical root 3–5 cm in diameter. The primary objective of the field stage is not the harvest of an edible part, but the accumulation of root biomass necessary for the subsequent forcing of chicons in the dark.

The technology requires deep soil tillage, as the crop's taproot penetrates up to 1.5 meters deep. An important condition is the selection of fields with efficient drainage, as water stagnation is detrimental to the development of the root system, which is subsequently used as forcing stock.
