The main criterion for rice processing suitability is its resistance to the formation of micro- and macro-fissures during maturation, harvesting, and drying. High fissuring leads to the breakdown of grain structure under mechanical impact from equipment, which sharply increases the percentage of broken rice yield and reduces the market value of the batch.
Important physical indicators include the 1000-grain weight, which indicates endosperm fullness, and the relative density of the caryopsis, which is typically 1.18–1.22. The optimal moisture level for processing varies from 14% to 15.5% depending on the cultivar type (indica or japonica), as excessive dryness increases grain brittleness.
Rice processing technology is based on the layered removal of husks while maintaining kernel integrity. When evaluating a cultivar's processability, amylose content is considered as it determines the culinary properties of starch, since gelatinization characteristics directly influence the adjustment settings of hulling and milling machines.
