Organoleptic assessment is conducted by tasting panels, where taste is evaluated for compliance with the varietal profile, and the presence of off-flavors, such as bitterness or acidity, indicates improper grain drying and storage conditions. At the same time, 2-AP biosynthesis is highly dependent on external environmental conditions and agronomic practices, which complicates the maintenance of these characteristics in mass production.

In breeding practice, there is a correlation between aromatic qualities and yield, so efforts are focused on creating varieties that combine high 2-AP levels with high productivity. Agronomic methods, including crop rotation choices, play a key role in the expression of varietal aroma characteristics.
