To determine the readiness of kiwifruit for harvest, the mass fraction of soluble solids is measured and expressed in degrees Brix. The accepted standard for commencing harvest is a value of no less than 6.2 °Bx. Fruits harvested with a sugar content below this threshold exhibit poor storage potential, are prone to shriveling, and are unable to develop characteristic flavor profiles during storage.

To ensure extended shelf life for fruit, reaching 3–5 months at approximately 0°C, sugar content levels of 7–9 °Bx are recommended. When assessing produce quality, the sugar-acid ratio is also considered, reflecting the balance between accumulated sugars and organic acids, which is essential for establishing the high consumer quality of the cultivar.
