The specifics of fresh consumption of endive are determined by its rich, tart taste, which is adjusted by the agrotechnical method of blanching. Restricting light access to the inner leaves of the rosette 12–16 days before harvest reduces the concentration of sesquiterpene lactones and makes the taste less intense.

Two main varieties are used in fresh form: curly endive (frisée) and broad-leaved endive (escarole). The plant is extremely sensitive to storage conditions: the leaves are prone to edge browning and rapid absorption of foreign odors; therefore, only fresh, firm rosettes without signs of wilting are suitable for consumption.

Endive serves as a component of salad mixes, where its bitterness is balanced by sweet ingredients. In addition to its gastronomic qualities, fresh consumption of the plant is valued for its chemical composition, which helps stimulate the appetite and promote digestive secretions.
