A complex indicator of peach resistance to freezing and temperature fluctuations, which limits its commercial cultivation. A critical factor is the sensitivity of generative buds, which often die at temperatures below -15 °C.

To assess the winter hardiness of peaches, field visual observations of tissue condition after overwintering and laboratory methods of artificial freezing of shoots and buds in climatic chambers are used. The key criterion for resistance is the temperature at which a certain percentage of flower buds or shoot tissues die.
Generative peach buds are the most vulnerable organ, although highly winter-hardy varieties are capable of withstanding temperatures of -20 °C and lower after the deep dormancy period. Wood and shoots are more resistant; however, if maturation is poor, they can be damaged at temperatures as high as -25 °C.
Winter thaws pose a particular danger to the crop, as they interrupt deep dormancy and make the plant vulnerable to subsequent cold snaps. Regular frost damage leads to reduced productivity, the development of necrosis, gummosis, and a shortened lifespan of orchards.
