The winter hardiness of common winter wheat encompasses resistance to a complex of negative factors, including extreme sub-zero temperatures, drought conditions, as well as infection with snow mold, Typhula blight, and root rots. An important viability criterion is the accumulation of sugars in the tillering nodes during the hardening process, which allows modern varieties to withstand temperatures down to -17...-22 °C at the depth of the tillering node.
Field visual observations of stand density, laboratory freezing, and the monolith regrowth method, which is considered the most reliable, are used to evaluate this indicator. Highly winter-hardy varieties, when sown at optimal times to ensure they enter winter at the 3–4 leaf stage, are capable of maintaining 90–100% viability after overwintering.
