The Eldorado variety belongs to the Kabuli type and is distinguished by large, beige seeds of a characteristic shape. The variety is actively grown in regions with Mediterranean climates, in particular, it occupies a significant share in chickpea production in the south of France.

The seeds of this variety tend to soften more during culinary processing compared to a number of other varieties. When soaked for 6 hours at a temperature of 20°C, the variety demonstrates relatively low hydration and swelling indices. Scientific studies use this genotype to study the plant's resistance to temperature stresses, including drought and extreme temperatures during the reproductive period.
