The Di Soncino variety is a historical ecotype originating from the commune of Soncino in Italy. It is a root vegetable that was used in traditional cooking in the past, for example, for preparing risotto.
The roots have a spindle shape, a brownish-yellow surface, and white flesh with thin skin. The taste of the roots is distinctly bitter and earthy.
The plant is characterized by its undemanding nature and hardiness. The variety requires loose, well-tilled soil and limited watering. Sowing is carried out in summer, and harvesting is performed in the winter period.
