Variety description

The plant reaches a height of 80–150 cm, forming a compact rosette of large pinnate leaves. The flower heads are ovoid, medium-sized, and characterized by purple scales with pointed tips.

The variety is perennial, but in temperate climates it is grown as an annual or requires winter protection due to low winter hardiness. It requires well-drained soils and is sensitive to waterlogging.

The mature flower heads have a delicate taste and are suitable for consumption raw, boiled, fried, or preserved. The plant is also used in landscape design as an ornamental crop.
